ooey, gooey, nutty, chocolaty, warm... WHAT MORE DO YOU WANT IN A DESSERT??
Blondies have always been the best of both worlds: thick and gooey like a brownie but nutty and caramelized like a cookie. Here is my favorite fool proof recipie for my blondies that satisfy every craving!
Pro Tip #1: MISE EN PLACE
Separate the different steps of your recipe into bowls. This will make things go much faster and cleaner. It also allows you make sure you have everything you need and control the timing of your baking.
Pro Tip #2: WHIP IT
When you whip the butter sugar and eggs together you should see a change in color to be much lighter and creamier. Also, add in the toppings (in this case chocolate chips and nuts) BEFORE the flour mixture. This helps prevent overmixing the gluten in the flour.
Pro Tip #3: Don't Let it Stick!
When you are lining your pan take two pieces of foil and overlay it going both directions. This will create 2 "handles" so you can easily transfer the blondie out of the pan. Spray the foil with non stick spray.
Pro Tip #4: Caramelized
You can tell when the blondie is ready by the color and texture of the top of the brownie.
Browned Butter Blondies
Prep Time: 20 minutes Cook Time: 25 Minutes Total Time: 1 hour
Serving Size: 15 Bars
Ingredients:
2 sticks (16 tablespoons) unsalted butter, browned and cooled
2 cups packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
1/2 teaspoon fine sea salt
1 3/4 cups all-purpose flour
1 t. baking powder
1 1/2 cups semi sweet chocolate chips
1 cup pecans (optional)
Get creative with your mixing. You can swap out the nuts or chocolate chips for almost anything!
Directions:
Preheat oven to 350 degrees Fahrenheit
1. Melt and brown the butter over medium to medium low heat. Use a stainless steel pot and continue whisking until the color is a light brown with dark brown bits floating throughout. You should smell a caramelized nutty aroma. Pull off heat and pour into a separate bowl. Let cool to room temp.
2. In small bowl add eggs and vanilla.
3. In medium bowl whisk together flour, baking powder, and salt.
4. Once the butter is cooled place into large mixing bowl with the brown sugar. Whip until fully combined and fluffy. Add in the eggs and vanilla and whip until the mixture changes into a lighter color.
5. Add in your chosen mixins- in this case chocolate chips and pecans.
6. Mix in flour mixture until just combined.
7. Line your 9x13 baking dish with foil and non stick spray (see below.)
8. Evenly spread on your baking dish and pop in the oven.
9 Bake for 20-25 minutes or until golden brown.
